Moving and sorting 1,000 tons of fresh vegetables and fruits overnight, every night

The goal was to sort through thousands of shops across Italy more than a thousand tons of fruits and vegetables.
The produce arrives until 11 PM and the last delivery must leave the warehouse by 7 AM int the morning: this means that in the space of one night, dozens of workers must receive, weigh, store and divide the produce for specific delivery to each store. So the question becomes: how do we facilitate their work while reducing the margin of error and making the entire process faster?
The plan we came up with, together with our client, includes an app with an interface designed so that each worker can focus only on the specific task to be performed in that moment. Plus, we added a special ingredient that radically changed the work dynamic!
